Instructions

  1. Make the Buffalo Chicken Filling

In a medium bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, shredded cheese and ranch or blue cheese dressing. Stir until everything is evenly combined.

  1. Fill the Taquitos

Place about 2–3 tablespoons of buffalo chicken filling in a line near the bottom third of each tortilla. Roll the tortilla tightly around the filling and place seam-side down.

  1. For the Air Fryer

Preheat the air fryer to 375°F. Lightly spray or brush the taquitos with oil. Arrange seam-side down in the air fryer basket without overcrowding. Air fry for 7–10 minutes, turning once if needed, until golden and crispy.

  1. For the Oven

Preheat oven to 425°F. Arrange the taquitos seam-side down on a parchment-lined baking sheet. Lightly spray or brush with oil. Bake for 12–15 minutes, or until crisp and golden.

  1. Serve

Serve warm with ranch or blue cheese dressing for dipping and extra buffalo sauce if you like a little more heat.

Note

Rotisserie chicken makes these especially quick and easy.

Don't overfill the tortillas or the filling can escape while they cook.

If your tortillas crack while rolling, warm them for about 15–20 seconds in the microwave first to make them more flexible.

You can adjust the buffalo sauce depending on how spicy you like them.

Make It Gluten-Free

Use your favorite gluten-free tortillas and make sure the buffalo sauce and ranch or blue cheese dressing are certified gluten-free.

Frequently Asked Questions

Expand All:

Can I use leftover buffalo chicken dip?

Yes! This is actually a great way to use leftover buffalo chicken dip. Spoon the cold dip into the tortillas, roll tightly and cook using either method.

Can I make these ahead?

Yes. Assemble the taquitos and refrigerate them covered until you're ready to cook. For the crispiest results, wait to spray them with oil until just before cooking.

Which is better—ranch or blue cheese?

Either works. Ranch gives them a milder, creamy flavor, while blue cheese gives you the classic buffalo chicken combination.

Can I freeze them?

Yes. Freeze the assembled uncooked taquitos on a baking sheet, then transfer them to a freezer bag or container. They can be cooked from frozen; they'll just need additional cooking time.
