Golden Garlic Cheese Bread

This Golden Garlic Cheese Bread starts with a crusty loaf of French or Italian bread topped with a creamy garlic butter spread and plenty of melty cheese. A little mayonnaise is the secret to getting the topping extra creamy and beautifully golden. It’s an easy side for pasta, soup, pizza night, or just about any family dinner.

Instructions

  1. Prepare the Bread

Preheat oven to 400°F. Line a large baking sheet with parchment paper. Slice the loaf in half lengthwise and place both halves cut-side up on the baking sheet.

  1. Make the Garlic Spread

In a small bowl, combine the softened butter, mayonnaise, minced garlic, and Italian seasoning. Stir until smooth and completely combined.

  1. Spread the Bread

Divide the garlic butter mixture between the two bread halves, spreading it all the way to the edges.

  1. Add the Cheese

Sprinkle the mozzarella evenly over the bread, followed by the Parmesan.

  1. Bake Until Golden

Bake for 10–12 minutes, or until the cheese is melted and the edges of the bread are golden. For an extra golden, bubbly top, broil for 1–2 minutes at the end, watching closely.

  1. Finish and Serve

Sprinkle with fresh parsley, if desired. Let cool for a couple of minutes, then slice and serve warm.

Note

For the best flavor, I would use fresh garlic rather than garlic powder here. You can substitute about 1 tsp garlic powder when needed.

For an even cheesier version, increase the mozzarella to 1 1/2 cups.

The mayonnaise doesn't make the bread taste like mayo—it blends with the butter and cheese and helps create that creamy, golden topping.

Make It Gluten-Free

Use a gluten-free French-style loaf or other sturdy gluten-free bread. Check the mayonnaise, cheese, and seasonings for gluten-containing additives.

Frequently Asked Questions

Expand All:

Can I make it ahead?

Yes. Assemble the bread, cover, and refrigerate for several hours. Bake just before serving.

Can I use cheddar?

Yes. I prefer mozzarella and Parmesan for an Italian-style garlic bread, but replacing some of the mozzarella with cheddar will give it a sharper, cheesier flavor.

Can I use garlic powder instead of fresh garlic?

Yes. Substitute approximately 1 teaspoon garlic powder for the fresh garlic.
