How to make Mediterranean Chicken Bowls
-
Marinate the Chicken
Add the chicken, olive oil, lemon juice, garlic, oregano, paprika, onion powder, salt and pepper to a bowl. Toss until evenly coated. Cover and refrigerate for at least 30 minutes or up to 4 hours.
-
Make the Garlic Sauce
Whisk together the Greek yogurt, mayonnaise, lemon juice, garlic, olive oil, salt and pepper. Add a little water until the sauce reaches a creamy drizzling consistency. Refrigerate until ready to serve.
-
Cook the Chicken
Grill:
Preheat the grill to medium-high, about 400–425°F. Grill the marinated chicken until lightly charred and cooked to 165°F, about 3–5 minutes per side depending on thickness. Let rest for 5 minutes, then slice.Stovetop:
Heat a large skillet over medium-high heat. Add the chicken and cook for about 7–10 minutes, turning occasionally, until browned and cooked to 165°F.Air Fryer:
Preheat the air fryer to 400°F. Arrange the chicken in a single layer and air fry for about 8–10 minutes, flipping or shaking halfway through, until browned and cooked to 165°F.
-
Prepare the Bowls
Divide the warm rice among four bowls. Top with chicken, tomatoes, cucumber, red onion, feta and Kalamata olives.
-
Finish and Serve
Drizzle generously with creamy garlic sauce. Finish with fresh parsley and a squeeze of lemon.
Note
Serving Tip: Serve these Mediterranean chicken bowls with warm Homemade Naan Bread on the side—it’s perfect for scooping up the chicken, rice, and creamy garlic sauce. These bowls are also great for meal prep; store the chicken, rice, vegetables, and sauce separately, then assemble when ready to eat.
Meal Prep: Keep the chicken and rice separate from the fresh vegetables and sauce. Reheat the chicken and rice, then assemble the bowl.
Don't like olives? Leave them out. The bowl will still have plenty of flavor.
Make it even easier: Use microwave rice or rice prepared earlier in the week.
Add hummus: A scoop of hummus would be really good alongside the garlic sauce.
