Slow Cooker BBQ Pork

This Slow Cooker BBQ Pork is one of our family's easiest dinners and one I make again and again. A pork loin roast cooks low and slow with barbecue sauce, brown sugar and Italian dressing until tender and flavorful. We love it served over rice with broccoli or corn on the side.

Instructions

  1. Add the Pork

Place the pork loin roast in the bottom of the slow cooker.

  1. Make the BBQ Sauce

In a small bowl, stir together the barbecue sauce, brown sugar and Italian dressing. Pour the mixture over the pork, turning the roast slightly to coat it.

  1. Slow Cook

Cover and cook on LOW for about 6–8 hours, until the pork is very tender and pulls apart easily.

  1. Cut the Pork

Cut or break the roast into large serving-size chunks.

  1. Finish the Sauce

    Thicken the Sauce if Needed
If the sauce is thinner than you'd like, whisk together the cornstarch and cold water until smooth. Stir the slurry into the sauce in the slow cooker. Cover and cook on HIGH for about 10–15 minutes, until the sauce thickens.

  1. Serve

Serve the BBQ pork over warm rice with plenty of sauce spooned over the top. Add steamed broccoli or corn on the side.

Note

Our Favorite BBQ Sauce: I use Sweet Baby Ray's Original Barbecue Sauce when I make this. You can substitute your family's favorite barbecue sauce.

Pork Loin: Pork loin is much leaner than pork shoulder, so I prefer cooking this one on LOW rather than HIGH. Check it toward the earlier end of the cooking time so it doesn't cook longer than necessary.

Make it saucier: After shredding, add additional barbecue sauce until it reaches the consistency you like.

Serving Idea: Rice is our usual way to serve this because it soaks up all of that sweet and tangy BBQ sauce. For a classic BBQ-style meal, serve it with Sweet & Tangy Homestyle Coleslaw and Golden Honey Butter Cornbread. Broccoli or corn also makes an easy side.

Make It Gluten-Free

This can easily be gluten-free. Use barbecue sauce and Italian dressing that are labeled gluten-free and serve with rice and your favorite vegetable.

Frequently Asked Questions

Expand All:

Can I use a different cut of pork?

Yes. A pork shoulder or pork butt would also work and will produce richer, more traditional pulled pork.

Can I make this ahead?

Yes. The pork reheats very well and can be stored with its sauce in the refrigerator.

Can I freeze leftover BBQ pork?

Yes. Let it cool completely, store it with some of the sauce in a freezer-safe container, and freeze for an easy future meal.
