Instructions

  1. See How the Street Corn Chicken Bowls Come Together

Roast the Sweet Potatoes → Add the Chicken → Make the Street Corn → Build the Bowls

Use the step-by-step photos below as a quick visual guide for making these street corn chicken bowls. Start the sweet potatoes first, add the seasoned chicken to the sheet pan, char the corn and turn it into a creamy street corn mixture, then pile everything over cilantro-lime rice.

  1. Start the Cilantro-Lime Rice

Cook the rice in the water or chicken broth with the salt according to the package directions.

Once tender, remove from the heat and fluff with a fork.

Stir in the salted butter, chopped cilantro, and lime juice. Cover and keep warm while you prepare the remaining ingredients.

  1. Give the Sweet Potatoes a Quick Head Start

Place the cubed sweet potatoes in a microwave-safe bowl with 1 tablespoon water. Cover loosely and microwave for about 3 minutes, just until they begin to soften but are still firm.

Carefully drain any remaining water and pat the sweet potatoes dry.

Toss with the olive oil, chili powder, smoked paprika, garlic powder, salt, and black pepper.

  1. Season the Chili-Lime Chicken

Add the chicken to a bowl.

Drizzle with the olive oil and add the chili powder, cumin, smoked paprika, garlic powder, oregano, salt, black pepper, honey, and lime juice.

Toss until the chicken is evenly coated.

  1. Roast the Chicken & Sweet Potatoes

Arrange the partially cooked sweet potatoes on one side of the prepared baking sheet and the seasoned chicken on the other, leaving a little space between the chicken pieces.

Roast at 425°F for 15–18 minutes, tossing the sweet potatoes and chicken about halfway through, until the chicken reaches 165°F and the sweet potatoes are tender with browned, caramelized edges.

For additional browning, broil for 1–2 minutes at the end, watching carefully.

  1. Char the Corn

While the chicken and sweet potatoes finish roasting, heat 1 teaspoon olive oil in a large skillet over medium-high heat.

Add the corn and spread it into an even layer.

Let it cook without stirring for 2–3 minutes, then stir and continue cooking for another 3–4 minutes, until you have browned and lightly charred kernels throughout.

Remove from the heat and let it cool for a few minutes.

  1. Make the Creamy Street Corn

In a medium bowl, combine the Greek yogurt or sour cream, mayonnaise, chili powder, garlic powder, and lime juice.

Add the warm charred corn, cotija cheese, and cilantro.

Stir until everything is lightly coated.

Taste and add a pinch of salt or additional lime if needed.

  1. Build the Street Corn Chicken Bowls

Divide the cilantro-lime rice among four bowls.

Top each with chili-lime chicken, roasted sweet potatoes, and a generous spoonful of creamy street corn.

Add avocado, additional cotija cheese, cilantro, and a fresh lime wedge.

Finish with Tajín or hot sauce if desired.

Note

Serving Suggestions

Serve these street corn chicken bowls warm with plenty of avocado, extra cotija, fresh cilantro, and lime wedges.

For more heat, add Tajín, sliced jalapeños, or your favorite hot sauce. You can also put all the toppings on the table and let everyone build their own bowl.

Make It Gluten-Free

This recipe is naturally easy to make gluten-free. Check the labels on the chicken broth, mayonnaise, seasonings, Tajín, and hot sauce to make sure the products you're using are gluten-free.

Sweet Potato Shortcut

Microwaving the cubed sweet potatoes with 1 tablespoon water for about 3 minutes partially cooks them before roasting. This means the sweet potatoes and chicken can go onto the sheet pan at the same time and finish cooking together.

Make-Ahead Tips

The rice, chicken, sweet potatoes, and street corn can all be prepared ahead of time.

Store the components separately and assemble the bowls when you're ready to serve. Wait to slice the avocado until just before serving so it stays fresh.

Storage

Store the cooked chicken, sweet potatoes, and rice in airtight containers in the refrigerator for 3–4 days.

Keep the creamy street corn in a separate airtight container for up to 3 days. Store the fresh toppings separately.

Reheating

Reheat the chicken, rice, and sweet potatoes in the microwave or gently in a skillet until warmed through.

Add the creamy street corn, avocado, cotija, cilantro, and fresh lime after reheating.

Easy Substitutions

Chicken breasts or chicken thighs both work well.

Use fresh, frozen, or well-drained canned corn. If you can't find cotija cheese, crumbled feta makes a good substitute.

You can also replace the white rice with brown rice or quinoa.

Easy Street Corn Chicken Bowls for Bowl Wednesday

These street corn chicken bowls have a little bit of everything: smoky chili-lime chicken, sweet roasted potatoes, creamy corn, fluffy cilantro-lime rice, avocado, salty cotija, and plenty of fresh lime.

And while there are several components, they're surprisingly manageable for a weeknight dinner. Giving the sweet potatoes a quick head start in the microwave means they can roast right alongside the chicken instead of requiring extra time in the oven.

Meanwhile, the rice cooks on the stove and the street corn comes together in just a few minutes.

The result is a colorful, filling dinner that's especially perfect for Bowl Wednesday.

Why You'll Love These Street Corn Chicken Bowls

The combination of flavors and textures is what makes these bowls work so well.

The chicken has smoky chili and cumin with a little honey and lime. Roasted sweet potatoes bring sweetness and caramelized edges, while the charred corn adds a creamy, tangy element.

Fresh avocado, cilantro, cotija, and lime balance everything out.

And because the creamy street corn adds moisture to the entire bowl, there's no need to make another separate sauce or dressing.

Creamy Charred Street Corn Makes the Bowl

Rather than simply adding corn to the bowl, we're giving it a few minutes in a hot skillet first.

Letting the corn sit against the skillet creates browned and lightly charred kernels that add much more flavor.

The warm corn is then mixed with Greek yogurt or sour cream, a little mayonnaise, fresh lime, chili powder, cotija, and cilantro.

Once you start mixing everything together in the bowl, that creamy street corn becomes almost like a dressing for the rice, chicken, and sweet potatoes.

A Weeknight-Friendly Chicken & Sweet Potato Bowl

Normally, sweet potatoes would need a head start in the oven before bite-size pieces of chicken could be added.

Instead, we're using a simple shortcut: microwave the cubed sweet potatoes for about 3 minutes first.

They'll begin to soften without cooking completely. Then the seasoned sweet potatoes and chicken can roast together on one sheet pan until the chicken is juicy and the potatoes have browned around the edges.

It's a small shortcut, but it makes these street corn chicken bowls much easier to pull together for dinner.

More Easy Bowl Dinner Ideas

Bowls are one of my favorite ways to make dinner because everyone can customize their own.

Add black beans for extra protein, shredded cabbage for crunch, sliced jalapeños for heat, or pickled red onions for a little extra tang.

Frequently Asked Questions

Expand All:

Can I make street corn chicken bowls ahead of time?

Yes. These are particularly good for meal prep.

Prepare the rice, chicken, sweet potatoes, and street corn ahead and refrigerate them separately. Wait to cut the avocado until you're ready to eat.

Can I use frozen corn?

Yes. Add frozen corn directly to the hot skillet.

It will initially release some water, so let that evaporate before trying to get color on the kernels.

Can I use canned corn?

Yes. Drain the corn very well and pat it dry before adding it to the skillet. Excess moisture will make it harder to char.

What can I substitute for cotija cheese?

Crumbled feta is the easiest substitute. It's similarly salty and crumbly, although the flavor is slightly different.

Are street corn chicken bowls spicy?

Not particularly. Chili powder and smoked paprika add flavor without making the bowls very hot.

Use Tajín, hot sauce, cayenne, or jalapeños if you'd like more heat.

Can I leave out the sweet potatoes?

Yes. The bowls will still work without them. You can add black beans, extra corn, roasted peppers, or another vegetable instead.

Can I make these without cilantro?

Absolutely. Simply leave it out. You can add sliced green onion or a little parsley if you'd still like a fresh green garnish.
